I wrote to the sonoma company and they told me they just followed the directions of the governi9ng body that dictates what you can put on nutritional information and have not done any lab tests. The non sonoma company bread had a review of a diabetic where their blood sugar spiked therefore not keto. The sonoma bread is much much more like bread and I thought too good to be true. There was actually sugar listed in the ingredients. The Non Sonoma bread fell apart easily especially when toasted and was dry all around. The non sonoma bread has (I believe, it’s been a few months”) 1 or 2 net carb(s).The Sonoma bakery bread has zero net carbs. The one made in Sonoma is made from resistant wheat starch and the other, made around Riverside or close, is made from tapioca starch (unless they have recently changed their ingredients). There have been 2 keto breads made in California and I think folks might be confusing the 2 similar breads, both labeled Keto.
